White and Milk Chocolate Macadamia Nut Cookies

This recipe comes at you by special request, when a friend was over, I of course HAD to offer her some of the delicious cookies from my freezer. Friends who come over often know that I love keeping cookies in the freezer, and so they often make a beeline to the freezer upon immediate arrival.


I love keeping cookies in the freezer for a few reasons, and not just to get friends to come over, but because if in the freezer there is no worry about them going bad, and I love the crunch of the chocolate chips when they are cold (great for dipping into hot tea).

After she tried these cookies, she asked for the recipe, and so here you go lady. These cookies have been tested by a few and the verdict is out: they are delicious. AND! because of a few minor tweaks they aren’t that bad for you either. Instead of using an ENTIRE cup of butter, I used 1/2 cup butter and 1/2 cup of apple sauce, and since you only really need the butter to make everything stick together apple sauce works just fine.


Also when you are making any dessert you can always get away with cutting out 1/4 of the sugar, so for this recipe I scaled back the sugar and brown sugar by 1/4, and used half and half of splenda and regular sugar.

This recipe originally just called for chocolate chips, but I decided to add some macadamia nuts for protein. Did you know that Rosanne from the show you used to watch after school bought an entire macadamia nut farm in Hawaii. She claims the macadamia nut could solve all the world’s problems. For more on her crazy theories you’ll have to track down her rant on The View, or her new reality TV show about her going nuts on her farm.

White and Milk Chocolate Macadamia Nut Cookies

Ingredients:

  • 1/2 cup butter or margarine
  • 1/2 cup of apple sauce
  • 1/2 cup of sugar / splenda
  • 1/2 cup of brown sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 tsp salt 
  • 1 tsp baking soda
  • 2 1/4 cups of flour
  • 1 cup of milk and white chocolate chips
  • 1/4 chopped macadamia nuts


Directions: 

Using an electric mixer blend apple sauce, butter and sugars.
Add eggs and vanilla
Mix all dry ingredients in a separate bowl
Combine wet and dry ingredients, adding the dry ingredients slowly
once combined, add chips, and nuts.
Refrigerate batter 1 hour (trust me it’s worth it).
Bake 8- 10 minutes at 350
