Faux-Fried Chicken & Cheesy Sweet Potato Crisps

Sunday night again. 🙁 BOO.  I’ve very much enjoyed my long weekend and am sort of wishing that I had booked more time off.  

Today I did nothing but hang out, blog, tweet, talk on the phone and cook.  With a yoga session thrown in there, of course! 😉  I really needed these 3 days, I’m feeling quite happy, relaxed and motivated to get in control of my health again.  I’m bringing nothing but positivity with me for the upcoming week.

Thanks for your feedback on the business cards, I had my Mom check them out too, and she pointed out that it looked like one of the cherries was rotten.  So, I switched out that pic for another and sent them off to the printers.  Can’t wait to get them!!

Tonight’s supper was healthified version of fried chicken.  Hubby loves it when I re-create junky meals and this was no exception.

I started by marinating 4 skinless chicken breast in Frank’s Red Hot Buffalo Sauce and a bit of olive oil.  I let them sit in the fridge for 4 hours and then coated them with Corn Flake Crumbs.  Baked for 50 mins at 375 degrees et voilà, faux fried chicken!

I really enjoyed the cheesy sweet potato crisps that I made the other week but thought they’d be better cooked in the frying pan.  Followed the same recipe – 1 large sweet potato, shredded, 2 egg whites, 1/2c parm cheese, rosemary & pepper.  Heated 2 tsps of olive oil in the pan and cooked over medium heat.  Approx 4-5 mins on each side.

This meal looked pretty brown until I brought big bowls of salad out to go with it!

Mixed greens fresh outta the garden! Plus cucumber, raspberries and goats cheese.  I topped mine with a little balsamic vinegar.

Chicken was good!  I use Corn Flake Crumbs instead of Shake & Bake because they’re a lot better in terms of calories/sodium.

The cheesy sweet potato crisps were SO much better pan-fried than in the oven. YUM!! Wish I had of had fresh rosemary on hand though.   I used dried but next time I’m using fresh. 🙂

Seven Day Yoga Challenge Report – SUCCESS!

FYI – I received comments from a few people saying their names were missing from the list of participants.  I’ve updated the list throughout the day so everyone should be there now. 

I got hubby to go out to the store to pick up a few groceries while I did my first yoga session.  I like having peace and quite while I practice. 🙂

Felt absolutely wonderful to stretch out! My favourite poses were tadasana, samasthiti & savasana for pure relaxation.

And half pigeon, cobbler, dead bug & spinal twist really helped to stretch out my whole body.
