I’m Hungry: Feta Tomato Stuffed Chicken

My friend gave me this recipe at my wedding shower, nearly 10 years ago and it’s always been a perfect busy week night solution.  I laugh every time I pull out the card it’s written on to see her comment on the top that “even she can make this”, since she's never been one for the kitchen.  But she's right, cause it's super easy and something the whole family will enjoy.      Ingredients:8oz goat cheese ¼ cup oil-packed sun-dried tomatoes, drained and chopped2 tbsp chopped fresh thyme½ tsp kosher salt (regular is fine too)¼ tsp fresh ground pepper1 tbsp olive oil4 boneless, skinless chicken breasts Pre-heat oven to 375 degrees. Combine goat cheese, tomatoes, thyme, salt and pepper in a medium bowl.   Cut a small slit in the side of each chicken breast.  Stuff equal amounts of mixture into each chicken breast.   Heat the oil in an ovenproof skillet over medium-high heat.   Add chicken and cook until browned, about 3 minutes per side.   Transfer to oven and bake until cooked throughout – about 15-20 minutes.  Serve it with whole grain rice and veggies or a salad and you’ll have dinner on the table before you know it.  You can also throw it on the grill if the BBQ is still in use!  So yummy. ...
