Good evening bloggies. As you know, I’ve been a bit pumpkin obsessed lately. Tonight was no exception.
The plan? Rosemary Pumpkin Risotto.
“This ultra-luxurious risotto is perfect for cool autumn days — it exudes comfort in every spoonful.”
I had to restrain myself from eating the entire pot. And sadly, must confess to licking the spoon clean after scraping out every last morsel.
Turns out my fresh rosemary wasn’t so fresh, so this batch was actually made with dried rosemary. I can only imagine how divine the dish would’ve been with the fresh herbs. Next time for sure.
Sprinkled with a healthy dose of fresh parm.
Try the Rosemary Pumpkin Risotto recipe, you won’t be disappointed!
Along with the risotto, I wrapped up some asparagus in prosciutto and baked for 4 minutes on each side. (Pan was coated in olive oil.)
Safe to say, hubby was impressed when he sat down for Supper!

My gym plans got changed around a it this week due to work related issues. I didn’t end up going today but will be going tomorrow for sure. We are going out to stretch our legs shortly though, so will still getting a bit of activity.
Other than that, not much is new with me. Looking forward to watching some Gossip Girl tonight!!
Later Gators.
