Good evening bloggies. As you know, I’ve been a bit pumpkin obsessed lately. Tonight was no exception.
The plan? Rosemary Pumpkin Risotto.

I had to restrain myself from eating the entire pot. And sadly, must confess to licking the spoon clean after scraping out every last morsel. 😉
Turns out my fresh rosemary wasn’t so fresh, so this batch was actually made with dried rosemary. I can only imagine how divine the dish would’ve been with the fresh herbs. Next time for sure.
Sprinkled with a healthy dose of fresh parm.

Along with the risotto, I wrapped up some asparagus in prosciutto and baked for 4 minutes on each side. (Pan was coated in olive oil.)
Safe to say, hubby was impressed when he sat down for Supper! 😉

My gym plans got changed around a it this week due to work related issues. I didn’t end up going today but will be going tomorrow for sure. We are going out to stretch our legs shortly though, so will still getting a bit of activity.
Other than that, not much is new with me. Looking forward to watching some Gossip Girl tonight!!
