Hydrate while you cool down in this hot humid weather with this healthy alternative to a favorite summertime treat! These popsicles are naturally sweet and perfectly hydrating. Swapping in the coconut water for a traditional fruit juice makes this summer treat the perfect go-to when the heat is high and the sun it hot!
I’m not going to lie blog reader I’ve been enjoying one of these bad boys quite frequently when I get home from work after making the long truck home, and I gotta say I’m kind of obsessed.
This recipe could NOT be any easier! You literally just need to throw a couple of ingredients into the blender and then pour the liquid into a freezer pop mold, but it’s the ingredient combination that is pure genius. Coconut water is great for hydration as we all know, but so is watermelon, and so the two together? I mean! The kiwi (which is my favorite part) adds a little sour flavor to an otherwise sweet snack; it also pretties up the whole operation just a bit 🙂 which of course we all know that I’m a fan of pretty food.
I’m not going to lie blog reader when I first tried coconut water I was not anticipating the taste, and I really disliked it (mostly I think it was the jelly bits – yuck I did not like that texture). But because I knew it was good for me I tried to like it over and over again. I’ve heard it takes 7 times of trying something to know if you actually like it, and I’m happy to report that now I do actually like it (I still can’t do the pulp jelly though, but I’m okay with that I can read labels). So if you are new to coconut water I do urge you to try it and even if you don’t like it at first who knows you might like it eventually. If you’ve never tried coconut water this might be a good introduction because the watermelon and kiwi really help to mask the taste, and you still get all its benefits! BONUS.
1 can coconut water
watermelon, sliced, and cubed (I used two rather large slices)
1 tbs lime juice
1 kiwi, peeled and sliced
Combine all ingredients (except kiwi) in a blender
Place one large kiwi slice in each of your popsicle molds
Pour liquid over kiwi to fill the mold (make sure to allot some space for the stick, so it doesn’t overflow)
Place popsicle holders in their respective slots 🙂
Place on a flat space in the freezer until firm (I waited overnight if you can believe it)
**I had watermelon mixture left over because my popsicle molds are not very big. If you find yourself with left over mix and you’re wondering what you should do with it. You could either keep the mix because your popsicles are going to be chowed down as soon as they are done OR you could strain out the liquid (to remove the pulp) and incorporate the watermelon concentrate with fizzy water to make watermelon soda (original watermelon soda recipe here).
Either frozen or enjoyed with soda you have a perfectly hydrating way to cool off on a hot summer day!
