Soup or Juice (Otherwise known as Souper Juice)

What else is there to do during an old fashioned Nor’easter than cook (and drink wine). Wait, don’t answer that!

I’d make soup for this dude any day.

Yesterday during a blizzard and after I opened a bottle of red wine, I made a soup that was pretty good. I hesitate to give the recipe because most of my creations are really concoctions. But, I’ll do my best.

Here’s how it works: I see a recipe that I think might work (meaning I have MOST of the ingredients) and I go from there. Tossing in related yet random ingredients.

My latest concoction is a version of the Weight Watcher vegetable soup. I decided to omit cabbage because… well, cabbage. We all know how that is going to end and from which end it will come.

Back to the “recipe”… In the largest pot I have, I threw in some fresh garlic, EVOO and onion. I sautéed that until it burned and then I fished out the burned garlic and put some new garlic in and stirred. All was right with the world again.

Oh, I also reduced the heat from HIGH to medium because I hear that that’s my downfall, cooking everything on high. Whatever!

After that I tossed in some chicken broth, red kidney beans, diced tomatoes, and assorted fresh vegetables (carrot, red onion, broccoli and whatever other vegetables were found in the bag labeled ‘stir fry’ at the grocery store). Then I added oregano, other seasoning stuff and a dash of pepper. I also decided to throw in a can of tomato soup as a bonus… just because it was in the cupboard.

Then I boiled the crap out of the concoction until the veggies were soft but not soggy.

Eventually it was suppertime. I eagerly awaited the reaction from the supper eaters…  it worked in my favour.

It was a tasty concoction with enough veggies and protein to get you through the night to the next buffet table.

Hmmm… what to make next? I think I’ll ask that guy…
